Are you looking for a nutritious meal that fits your diet and busy schedule? Grant Thimesch is a an athlete on the Drury University baseball team, a 4.0 student, and an aspiring physician who has mastered just that. Thimesch invited The Scoop into his kitchen to observe as he prepared his simple, healthy, and delicious lemon-pepper salmon.

1. Cut the Fish

“Before I do anything, I usually cut my salmon in half to ensure even cooking,” Thimesch explains. “If you don’t, it becomes difficult to flip a whole fish when the time comes.

2. Turn on the Heat

“I make sure to turn the stovetop on a low heat so that the pan can get warmed up and ready for the fish.” Thimesch says.

3. Spread the Olive Oil and Add Seasoning

While the fish is still on the cutting board, Thimesch’s next step is to rub a small amount of light olive oil on the filet. “You want just enough to get the seasoning to stick,” Thimesch says.

Then, after the olive oil has been applied, transfer the fish to the grill and sprinkle a layer of lemon-pepper seasoning on the fish.

4. Cook the Fish

“Once the fish has begun to cook, you can expect for it to cook for 6-10 minutes. Flip it halfway through,” Thimesch advises. “It should be a light pink and flaky when it’s ready to eat!”
